If i were a zombie that didnt have to breathe so i could stay under water longer, then i'd say a matter of 4 hours. Depending on the size and type of shark.

Sharks don't single out people. And have you ever heard of a case where they actually "ate" the person? No..they bit one of their limbs and found out it wasn't what they wanted.
