If you're going at it from a health aspect, take boxing. It's not as glamorous as saying "I take Tae Kwon Do or Karate", but you'll get a much better and involved workout. Sparring, speed-bag, body-bag and jump rope all build up your cardio and muscles. It's also a much more effective and easier style to learn if it comes to defending yourself from your average bar loudmouth denizen.
That or Muy Thai (kickboxing), but it's hard to find a kickboxing class in the U.S. that follows Thai rules.

I was currently looking into the schedules for Hapkido and Aikido, both of which are offered at my university, because it kicks ass.

Not bad either, just depends what you want to get out of it the most, fancy moves, exercise/fitness training or some happy medium.
Jujitsu (if they offer it) is also excellent and a great combination of cardio/muscular workout and self defense training (probably the best, as most fights end up on the ground). You'll also get to roll around the floor with other guys, which may or may-not be a positive for you.
