The point about his mind being stronger is well taken. But Sentry is a mortal. Couldn't Strange just snuff him out?

remember he imprisoned Hulk in the Crimson Bands of Cyttorak and didn't have the necessary willpower to maintain his hold on The Hulk?
also, he figured a little Zom channelling would be a good way to physically overpower Hulk. seems like he is repeatedly overestimating his control over the forces that he gets favours from or underestimating his opponents.
