Captain America (616) vs Captain America (Ultimates) = Ult. Cap. I'm sorry, but he's just a beast.
Match2
Wasp (616) vs Wasp (Ultimates) = 616 Wasp. Her sting blasts can penetrate tempered steel.
Match 3
Henry Pym (616) vs Henry Pym (Ultimates) = 616 Pym. He's smarter, better and more tactical.
Match 4
Fantastic Four (616) vs Fantastic Four (Ultimates) = Tough call. Both Reeds have thought their way out of messes. 616 IW is more powerful. Ult. Thing seems stronger but lacks heart. Both Human Torches are about equal. I'll say 616 FF.
Match 5
Wolverine (616) vs Wolverine (Ultimates) = 616 Wolverine.
Match 6
Iron Man (616) vs Iron Man (Ultimates) = Ult. Iron Man. No contest. His feats are way above current Iron Man's.
Match 7
Namor (616) vs Namor (Ultimates) = Ult. Namor. That guy is basically a god.
Match 8
Hulk (aka WWH) (616) vs Hulk (Ultimates) = WWH over Ult. Hulk. Ult. Hulk just about any other time.
Match 9
Thor (616) vs Thor (Ultimates) = 616 Thor. But Ult. Thor is a badass in his own right and it would be close.
And last but no least
Match 10
"The ruthless" Nick Fury (616) vs "The King of Cool" Nick Fury (Ultimates) = Nobody takes down 616 Nick Fury. He'll be back to save Marvel Earth in Secret Invasion, I'm telling you...
Ultimate Namor is one of the highest tier characters in the ult universe. Hes done some crazy things in his few appearances. He takes the win. Ultimate Hulk should be able to beat most 616 versions of the Hulk. Hes shown no limit to what he can do, and hes ripped and broken adamantium with little effort. Ultimate Captain America takes his fight as well in my opinion. I dont think hes ever been outclassed in standard hand to hand fighting by anyone near his level. Plus as mentioned hes a lot more likely to fight dirty. For all the others I'll give the 616 characters wins, unless Ult Ironman is able to use that huge ass ship, since it was technically considered one of his armors, but yeah thats reaching.
would love to see Ult. Hulk vs WWH.
I think both really have the same power levels, Hulk's adaptation and spontaneous mutations are something that should be explored more ... I remember reading an edition of IH where he started to breathe/talk underwater, whilst walking on the ocean floor on his way to Nightmare's Island.

Yeah 616 Hulk used to hold his breath underwater, thinking that he would drown, but one day discovered that he really didn't have to bother - his body literally grew the organs necessary to breathe underwater.
Just one of the ways in which Hulk has physically changed over the years.

In New Avengers #5, 616 Iron Man was only able to provide a forcefield to cover his teammates and NOT save dozens of mutates from a white energy level flux incoming barrage (whatever that means). But in Ultimates Vol. 1 #12, we see that Ult. Iron Man saved not only his teammates from an island-wide nuclear detonation, but several hundred SHIELD agents as well with the same amount of prep time, if not less.
Yes, Ult. Ironman is quite dependent on a multibillion-dollar support system, but it appears that his armor's capabilities surpass that of 616 Iron Man's.
And as far as I can see, their intellects, at the very least, match each other's. 616 Iron Man is a futurist with experience, but Ult. Iron Man's brain cells permeate throughout his body (if you read Ult. Iron Man). I thin his inexperience would be fairly compensated for by this bizarre mutation (or whatever you call it), if anything.

If you have read the issue and if I am recalling this correctly, you know that Ironman was low on energy the whole time. This can be seen when he does his magnet trick earlier in that issue.

I can imagine the kinds of feats that you'll come up with and I choose to address them as they are posted. I am, by no means, an Iron Man expert, but I think I have a fair knowledge of 616 Iron Man's feats and history and a comprehensive knowledge of Ult. Iron Man's feats and history to make a case for Ult. Iron Man > 616 Iron Man. Go for it.

Match 1 616 Cap hands down 7-8/10(tough fight though.) To skilled, too fast, and too American. He verbally sons him as well.
Match 8 WWH easily.
Match 9 Again 616 Thor has the better overall feats.
