In no particular order, these scene's come to mind:
The opening sequence of Raider of the Lost Ark (the spiders, swinging across the pit, the idol and the poison darts... and that bolder! Classic stuff).
The fight between Indy and the Nazi's (the huge bald guy, the fight for the truck)- another classic from Raiders.
The fight between Bruce Lee and O'harra in Enter the Dragon.
The John Wayne fight sequence in The Quiet Man- maybe the funnest fist fight ever filmed.
Neo's final confrontation with the Smith's in The Matrix.
Arnolds fight against Bennet at the end of Commando. Rarely has a fight been so brutal and yet so funny.
Bond's (Connery) fight against the assassin in From Russia With Love. Perfect display of what makes Bond, Bond; brutal, lethal, efficient, suave. When he straightens his tie and smooths out his jacket after killing the guy... so cool.
The chariot race in Ben Hur.
The sword fighting in the first Banderas Zorro was very exciting and well staged.
I'm sure there are many other worthy choices to add to these.
the bathroom fight from True Lies is pretty awesome.
come on, who tears a blow dryer from the wall and beats a guy with it? Arnold Schwarzeneggar, that's who.
also, i'm particularly fond of every action scene in Shoot 'Em Up, and every fight during the Hard Goodbye part of Sin City (the part with Marv and Goldie, for those who haven't read the graphic novel)
also, as much as i hate the AVP movies, i have to admit, the fights between the Xenomorphs and the Predators are damn cool.

You're right on the Matrix stuff- and I agree w/ you on DBZ as well.
Yeah, that fight was good, but I'd go with the opening chase/fight sequence from Casino, with all of the climbing and jumping... that was fantastic.
