You're leaving out details again.The first is that Thanos was encased in stone. His body wasn't turned to stone. Second is that Thanos had just killed Warlock and was completely caught off guard when he came back. Third is that Warlock was channeling the power of the Soul Gem (which he had just come out of), and that's why he appears fiery and not at all looking like a typical Adam Warlock. And lastly (which to your credit you do note) is that that's an early version of Thanos, pre any upgrades. After the first upgrade, he resists reality manipulation fairly easily:
And as you can see, he even states that in his previous incarnation he wouldn't have attempted that. But with the upgrade Death initially gave him comes, apparently, reality manipulation resistance.
