Actually Soresu is mentioned a couple of times (as is most of if not all other forms) particularly by Mace when he is talking to Kenobi.

Lightsaber forms (at least 3 or 4 of them) are talked about alot when Dooku is involved too. Plus vapaad with Mace vs Sidious.

Sounds about right. I did some research and found out those were mentioned. Guess that makes them canon. Carry on.
