Why would it be destroyed when there are still planetary bodies? and a plant on the planet it destroyed?

You'd be foolish to take that quote literally.
Eternity never literally had the mass of universes in his hand, that was never depicted even artistically.
It was emphasised that Eternity is time, therefore within the span of time universes come and go. It says universes past, present and future cascaded into Stranges mind, therefore Strange was given an insight into Eternitys experience and knowledge of these universes past, present and future as the timeline incarnate.
Unless you would have us believe Eternity inserted the mass of a multitude of space/time continuums within Dr Stranges skull? 😕
