actually in some interiew thing i saw lucas said that the movies were about the rise and fall of vader, or atleast thats a background storyline.

as far as the movies go id say Darth Vader as he did defeat the emperer. although he wouldn't have returned to the light if luke wasnt arround

The actual story is about Anakin Skywalker, everyone else is secondary. I suppose the "Hero" would be Luke though.

I don't think 'everyone else is secondary', just because this is 'the tragedy of Darth Vader'... It may be based on this, but many other characters play very important roles such as Luke or Ben Kenobi, which had a lot more time on-screen than Vader on ANH.

But yeah, if by 'SW Saga' you mean the six movies, then heroes vary. The PT had different heroes than the OT. As for the main heroes in each era, well:
OT - Luke Skywalker
PT - Obi-Wan Kenobi

This arguments been had before If I recall. Anakin is a silly suggestion, and really, why trust George Lucas' word if he made such poor films as the Prequels and Return of the Jedi. He might still attain mogul status, but that's through ILM and THX rather than anything he has done with a camera.
