In a what if called the last Galactus story or something along those lines, one single watcher rearranges entire galaxies (planets and stars placed in geometrical shapes) in a pattern he likes. A fully powered Galactus that just fed on Earth attacks him. They fight for eons, in a continuous stalemate till galactus barely wins iirc and opens his armor up, the energies contained inside creating a new Universe (with Nova turning into the new Galactus).

Taking on a fully powered Galactus after rearranging galaxies...and that's one watcher, not Uatu or anyone of any importance IIRC.

So...no, I will never be convinced that the red hulk thing was anything other than pure and utter crap.

Not necessarily. A lot of the time GREAT writing has PIS. No one complains that Johns doesn't simply have The Thunderbolt clear up every single problem the JSA encounter; that's pretty clear PIS and it's still excellent writing.
