Thanos is not that much of a plot device. Does he win sometimes were he should not? well rarely and all of his victory against Skyfather and up are from artifacts. Other than that Thanos has been consistently shown to be above heralds I mean he has dominated pretty much all the top tier marvel heroes. As for strange he is shown to be high herald/ surfer level most of the times but from time to time he would pull impossible stunts like defeating things he should not due to the nature of his power which is magic channeled from other being such as Vashanti.

For this fight though I think strange has the tool to defeat Thanos if the writers want him to , but in over 2 occasions strange has pretty much said Thanos > himself

But if anyone at herald level can beat Thanos I would say strange has the best chance

Thanos managed to get all the Infinity Gems from the elders he came up with a plan for Hunger with in less then a day in which he even Galactus following his lead. He was able to stop Warrior Madness Thor's rampage. He has gotten his hands of a cosmic cube.

Thanos has.

Strange said that He would need the help of the Silver Surfer to bring down Thanos when they teamed up in "The End".

This isn't Thanos with prep so he loses badly.
Dr. Strange can control time, Thanos can't.
