Why should a spirit (which doesn't have a physical form), be affected by physical damage? Sure his body was burned/damaged, but fire doesn't burn/damage a spirit.

Way I see it, your spirit form's appearance is determined by how you think of yourself. When Anakin was redeemed, he thought of himself back before he turned. That's how he imagined himself, so that's how he appears.
