While the missiles and lasers are true, his jet-pack isn't shown for more than just leap-type burst into the air. Goblin has the advantage of heightened speed and reflexes in using his weapons, combined with a very fast rate of travel on the glider.See, when did Grievous kick-ass like that in the movie, he seemed like a pansy compared to the Clone Wars cartoon series? Not saying you're wrong, I just don't remember him doing that. Those sabres would tear apart Goblin, but Goblin is airborne and highly maneuverable.
And Grievous was much weaker than in the cartoon, agreed, but he still stood alright against Obi Wan, one of the most powerful Jedi. That should count for something.
