Depends on the knight, but the Space marine by himself isn't all that powerful. Now a Librarian or a Syker... that'd be a good fight for a Jedi.

Yes, Grey Knights would be a good match for a Jedi. everyone of them is a psyker, not to mention having Superhuman Strength,Speed and Advanced power armor.
