That wasn't his shoulder cannon, The Shoulder Cannon was damaged prior to the Predator firing of some kind of missile from it's glove.

Predator wins assuming it's a decent one. There weapons will go through Terminators no problem.
Yeah the Predator has a lot of different bands/filters ranging from heat, to infared uv and EM or electrical scanning I think, seen in the movies, more expanded on in the PC AVP game..
Also, lets go with your scenario of it being endo skeleton sans flesh Vs Predator w/heat vision.
If the Terminator employs weapons, their gun's muzzle'd heat up and that'd be a giveaway.
Also if the Treminator is on concrete, those metal feet bits will be heating up a bit (maybe a small detectable amount, judging by the heat scanner's apparent sensitivity) with all that weight bearing down on it and the friction and heat from running/striding.
