He said it because the girl was making an ass out of herself, because she was assuming stuff (like assuming Ragnos is the most powerful Sith Lord).

And she was making an ass out of him by assuming something that would be stated officially by her so he would have another disadvantage in the case and maybe lose the case because of it, which would make him an ass in the eyes of the person he was defending because he was so sure that key witness would help and if you are so certain of something and are an ******* while doing so, but it shows that you weren't right it'd make you an ass.
