Thor is highly molecularly resistant. Loki needed to be amped by skyfather level magic to even affect him(Loki who is a very high level matter manipulator).i dont think Iceman manipulating his molecules is very likely to work.

Iceman's body maybe able to exploded outwards into different locales but his mind has and has always been shown to stay in one area at one focal point just like a normal human's mind. This is why even when Emma took control of him she could still only use human perceptions of the area she was in.
