I agree it should end, but just ignoring beloved characters is silly to me. Hell just deleting him is messed up. They could have written him as leaving to start his own tech company or some shit(yes the character legit has the expertise to do so).
What they should have done is said "f*ck you" to those whining and ended the series with the final shot being Apu going "Thank you come again!".
