It's an evolution thing.
So basically, one of my first chefs was a hardcore Ramsey wannabe. He ripped into us over everything
He threw things. He called names. He dumped a bin of pasta on a cook once because it was moldy on his station.
The next chef was great. Really funny and fun to work for. Super team motivated guy. Never yelled or swore at us.
Next guy was lazy and would stand there yelling at us when he drank on the job and would blame us for all the issues in the kitchen .
Next chef was cool. Really laid back and really hands on. He didn't tell and he did promote team work and rewards.
In the time of working under those chefs.
I was
1: from know nothing and getting yelled at.
2: hard worker and happy.
3 : angry and stressed.
4: kind of a Ramsey wannabe myself, abusing my power and yelling at the cooks below me.
Then I left the club.
I got humble and learned how to actually teach and motivate people.
Now I work happy while stressed.
This is the most basic coles notes version of it.
It's been nearly 10 years on the industry. So a lot has happened in that time and I've changed a lot.
Learning to cook is easy at home
Learning to do it with a team is something else.
You have to count on people who are often better or worse than you. Very rarely is someone on the same level as you in communication and skill and knowledge and consistency.
You have to give and take and flex and stretch every single day.
I'm lucky now because I work mostly by myself. The chef lets me do my thing and the other cook I trained previously, so I don't have to worry about what she can do or will do because I trust her.
It's not easy.
