You have to eat sun ripened food walshy. You don’t want to miss out.

I like eggplant. I used to do a lasagna that Had a layer of eggplant inside with a butternut squash puree sauce.

I'm not fully vegetarian. But I make the effort more than most. I don't mind the faux meats. We eat them often enough.

I should eat more vegetables generally but besides Sunday roasts with peas carrots and potatoes, I don't really bother

I should send you my curry picklesd veg recipe. It's the most amazing thing.

The recipe makes a lot. But it can be scaled down

It's great with patê or on rice pilaf with some BBQ salmon.

Or even just garnish on the side. It's sweet and sharp in all the right places.

What about sweetcorn, brocoli, cauliflower leeks etc.

Very rarely have them but I don't like Brussel sprouts and don't care much for sweet corn

nobody likes sprouts

You know what I didn't used to like parsnip but had some at this pub with my parents not too long ago and they were alright so I think I like parsnip now
