We hired a new girl who is deathly allergic to nuts.
The chef wants to do a pad thai dish.
I said that isnt a good idea, the very air around peanuts could kill her.
He said " its not my job to cater to one person. Im not changing the sauce"
He is holding his ground for literally no reason.
cooking is literally catering to individuals.
If someone asks for a modification on a dish, we do it.
That is literally what it is.
It is that thing.
It is literally that exact ****ing thing.
That is where i am different. I am always mindful of those allergies, i would not have something on the menu that could potentially send a member of staff to the hospital for just being in the kitchen while its cooked.
Heated peanuts, and peanut sauce. Much like everything else on the planet, has an aroma. That aroma is filled with the particles of that item.
This is why nut allergies are serious. Breathing in that shit can kill someone if the allergy is severe enough.
Seriously. I ****ing hate this industry.
Every "chef" is a self entitled ******* who does what they want regardless of how it effects people. They dont care if a customer or staff has an allergy or intolerance to certain items. This is how its made and thats all there is to it.
**** that. Those people will not come back if you cant take the time to give them something they CAN eat

I have 1 allergy and it is super minor. I get an itchy throat.
But if you take the time to make sure my food doesnt have that ingredient, i will return. Often. Might be the only place i eat.
Seriously.
At the one place i was running, we had regulars who came in BECAUSE THEY COULDNT EAT ANYWHERE ELSE IN THE CITY. Because of assholes who wouldnt bend juuussst a little.
So we had their business 4 nights a week every ****ing week.
That. Is. Profit.
That is how you run a business.
That is how you can say you care about the product and customer.
It sets me off.

Not more than three days ago does he tell me to call him out in anything i see, because i have the morale compass. Im the health and safety guy(actually certified for health and safety) I have always put a ton of care and effort into the food. This is why he tried to hire me for so long.
I call him out on this.
He told me to shut up and just cook the food.
