I'm watching a PBS documentary about Prohibition whilst drinking heavily. The first episode is called "A Nation of Drunkards".

is it about prohibition in general or is it more about the mobs involvement with prohibition?

i swear everything about prohibition involves the mob

but goddammit i want the whole story not just the stereotypical tale we always get

Nope this one is about prohibition in general so it's a worthwhile watch. It's over 5 hours long split into 3 parts, the mob gets kinda mentioned in the final parts when it talks about some of the consequences, but it's also talks a lot about what lead up to it and how they maintained it for so long. It's by Ken Burns(he does some good doc-series).

These people were stupid, they might have had a better chance for this succeeding if they had kept beer and wine legal and just banned the hard stuff.

The documentary does indeed talk about how they played a part. Politicians played both sides. Publicly supported prohibition because they anticipated the women getting the right to vote and thus they knew supporting it would gain their votes. But they were also crooked and knew they could profit off bootlegging as well.
