Graveler runs down trees and boulders for the single reason that he doesn't feel like going around them. He EAT stone at a daily basis. Chris can do nothing against this guy, who for the record is tougher than regular stone, fights back and has both projecting and melee abilities (Offense as well as defense)
The Pokédex says that when he rolls, once he has gotten momentum there is NO Pokémon that can stop him without effort.

Wesker is not more durable than stone and was weakened when Chris beat him. Chris was also not alone in that fight and Wesker did not use ranged attacks.
What Chris has dealt with is of no significance here. He doesn't have the feats required to even damage Graveler, let alone win.

1. Wesker survived bullets and had a rocket exploding in his face without fatal injury. Wesker also uses a handgun.
2. Graveler is not Golem (who withstands dynamite). A grenade or shotgun blast will do damage.

That's just proof enough that Graveler is not as durable as you claim it to be.
3. Graveler is weak against water and ice attacks. A nitrogen grenade will do the job. And acid is definitely gonna hurt especially if the rock Pokemon can break while sliding down mountains.

Graveler is heedless of body parts chipping of as you said, so Chris will be out of ammo long before Graveler is slowed down. He can only carry so much weapons and he only has one or two rounds for the rocket launcher, if he carries it around at all.

1. Gameplay only? BS! It's common knowledge that Wesker always has his Samurai Edge. With your logic, brainwashed Jill doesn't use guns and Uroboros Aheri was never destroyed by the satellite laser. On the other hand, Graveler can't learn flamethrower or any TMs because he doesn't learn it via levelup
2. When Chris is out of ammo, Graveler would be lucky if half of his body is still standing. Chris used a rocket launcher when delivering the final blow to Wesker so yeah, he does use one.
3. Graveler's rock hard body isn't going to protect him from Nitrogen and Sulphuric acid rounds.
Sandstorm? 🙄
Flamethrower? Chris isn't going to be a sitting duck.
Dig? He's fought monsters with an ability like that.
Earthquake? Graveler's only winning option besides exploding.
Stealth Rock? Chris is not a Pokemon
BTW, isn't Graveler slow? Chris would unload Nitrogen grenades on its face and make it shatter with a few shotgun shells. Hell, he could just lays mines everywhere and watch as the Pokemon kills itself.
