They didn't fight kung-fu style. Iron-Man was laying into Mandarin with Uni-blasts and repluser blasts, and Mandarin was eating them. Mandarin didn't really start h2h Tony until after his rings where ripped out, and even then that fight technically ended in a draw. Tony was passed out and Mandarin was frozen by a tank of liquid nitrogen.That doesn't change the fact that he can fly and can matter manip.
Anyway, Dracula is a bigger jobber than Mandarin. A chi amped human getting overpowered in melee by Iron Man isn't even close to as bad as Dracula getting pawned by Blade once a week.
