Despite how some writers portray Thor is actually very intelligent. One of the best medical doctors Earth has seen to the point he can pull out unknown ancient techniques out of his ass, and accomplish shit no other surgeon could. He also has a clearly above average ability in other areas. Genius level even looking at some of his inventions.
However chess isn't purely about intelligence and knowledge. If Thor actually tries to use his head he wins. If he doesn't this probably ends up an arm wrestling match. Green Scar was not stupid however. He had common sense and was cunning at times.

WWH stomps. no matter how you look upon Chess, whether it's all about computing huge numbers of permutations, analysing and pre-empting the idiosyncrasies of the opponent, formulating strategies with contingencies and traps built-in ... Banner/WWH would own.
Banner's demonstrating just how strategically and psychologically adept he is in the way he's manipulating events through FoTH and WWH did this in the Planet Hulk and World War Hulk arcs.
