Which Solomon Grundy, and am I taking this too seriously?

I don't think High Evolutionary is Skyfather level in power, and H-E is a well known lousy fighter. It's not surprising someone who knows how to get his hands dirty like Apoc could hold his own.

What about having the ability to literally become as strong as you want to become?

His skyfather feats are:

Fighting H/E without losing.
Talking to Uatu as equals and showing no fear of Onslaught.
Casually smacking down Cable.
Making Loki flee after Loki damn near BEGGED him to join his group.

Also, I find it funny how you guys claim that Diana has FTL combat speed when she has done it on 2 occasions in her 60+ years of history, but discount Apocalypse' top feats that put him at the sky-father range.
