People find it very easy to pick apart the accuracy of a show that deals with dead people eating living people.

No, something major like that is completely different than something as simple as inaccurate portrayal of weaponry. It wouldn't work in the context of the show, anyway.

But something simple like people complaining about how many shots each gun took.

Finally caught up on the two episodes I missed. There's just been 3 new episodes on Season 3 so far, yes? Anyway, I was right.. the first episode should have been a two-parter. The next episode rocked... would have made an excellent two-part season premiere. And now we've met the governor..

So what's the deal with the zombie heads in jars? Is he a big Futurama fan or what? (lol) Is it from the comics or are they using that as a substitute for him banging his zombified daughter?

Yes the Zombie jar scene was in the comic. But, they made it plainly obvious he had a daughter when they showed his family.

I'm still holding out for the zombie daughter chained up. I mean, the shows dark enough, but I think that'd raise it to a whole other level. Which I would enjoy seeing, because that's exactly what the comic does.

I doubt they will deal with the incest story-point. Seems too much for TV, but maybe I'm wrong.

What does everybody think is gonna happen to the two surviving prisoners? Are they gonna let them stick around now that they've proven themselves or will they still be banished?

Let them stick around after the one didn't shoot Rick when he had the chance. That other prisoner was an idiot, why would he think that was a good idea unless he was prepared to die himself.
