The first fight Mephisto only wanted to currupt him, not actually beat him.
The second scan was a stalemate.

He defeated both Surtur and Ymir IIRC by teleporting them to the sea of eternal night where they would be stuck in suspended animation. If he were to do the same against Thanos, that would be a victory.

The spark IIRC was an internal thing. It gave him the hope that he needed. It was an internal/psychological type thing. The spark didn't increase his durability or his ability to absorb energy.

I'm not sure what scene his talking about but Thor has fought Mephisto more than once in his realm and has done incredibly well.
The God Blast was not amped by the belt of strength by the way. It doubled Mjolnir's fortifications.

I always thought Odin was supposed to be the most powerful of all Asgardians and Olympians.
Then as Thor is son of Odin and Elder God Gaea he would be most powerful of all.
So if everyone saying Thanos beats Thor easily, seems Thor character has been badly written.
In my opinion hierarchy should be
physical strength

Thor #205 - He fought Mephisto and his legions. Mephisto did not seek to merely kill him but to corrupt him as well here.
Thor #310 - Thor battled Mephisto and his legions again. This time he wanted him dead without any circumstances IIRC.
Thor #325 - Thor fights and defeats a Mephisto empowered demon known as Darkoth. I like this one because after setting the demons spirit free, Thor calls to Mephisto to fight him, and Mephisto chickens out IIRC.
He gets Ulik to work for him by using him as a pawn in the Thor Annual #12. This is easily Mephisto's best showing against Thor where he dissolves and recreates Mjolnir, claiming his above the enchantment (I call bull but whatever).
They also have some brief encounters where he kidnaps Thor in Loki's body in Thor #180 and #181. He also has some encounters with Masterson in Thor #453 to #455. He appears regularly in that time in Thor (#441 to #455).
He doesn't really get his hands dirty in those appearances however after Thor #310.

Is Thor the only popular high herald who hasn't gotten some form of upgrade here or there? Superman, Wonder Woman, Hulk, Flash, Surfer to a lesser extent etc. have all received one in some shape or form.
I guess Hal Jordan would also be one that hasn't gotten an upgrade. Kyle had one, but he lost it IIRC.
Imo, Mjolnir itself -when written properly- is a trans or above level weapon. Perhaps writers have felt that there was no need to amp him given what he already has access to.
I also personally believe the elder god blood in him allows him access to much deeper reserves of power to draw upon then any other herald. This has never been stated explicitly, but its been seemingly implied looking at some of the higher end feats. But like I said, no one seems interested in further exploring this.

I've also wondered about this. Though it was touched on a little in Thor 4 but then nothing..I was expecting to see more feats from Thor outside of Mjolnir but was sorely disappointed.
