The deflection, at minimum, requires significantly better prediction and a higher degree of precision (compare hand size to pebble size).
Though anime often drastically underestimates how fast bullets are, comics do too, so that about events out.
It's worth remembering that all of the Gung-ho guns, who were often superhuman freaks, were pretty much considered throwaways by Knives and not really going to have a chance against Vash. The Spike-ball guy was blitzed so bad he didn't even notice how Vash had disarmed him and gotten into melee. Normal humans, even freakishly trained ones, simply were outmatched by him even without the machinegun arm and angel arms.
Deadpool definitely got the speed to keep up. Plus I gave him lots of equipment to make up for speed/reflexes difference while Vash only got his gun.
