in essence, this fight is basically SF with shikai/shunko, vs Byakuya with bankai...
if Byakuya's bankai, which allows him to attack and defend at the same time, can keep up with bankai Ichigo's speed, I don't see why it would have problems against SF...
if SF is fast enough to blitz Byakuya before he goes bankai then she wins, I don't think she can though IMO...

Senbonzakura is only as fast as Byakuya is. The very fact it's at it's fastest when Byakuya is guiding it is proof of this. Therefore it's easily deducible that someone faster than Byakuya is faster than his bankai. Given Soifon is so adept at Shunpo she can make 15 clones with it, I would wager she is quite able to dodge it for the most part
With Shunko she has the power to overcome it, though i would not say for long.
