How strong would a zombie have to be to pierce supermans skin and eat him?

Depends on whether the zombie was magically brought back or not.

It also depends on which Superman.
Vampires have pierced Supes skin and it resulted in him bursting with Solar energy wiping the vamps out.

Zombies don't have sharp teeth though.

I assumed he meant the most current, pre-reboot version.
