Odin was doing fine before using Gungnir. Gungnir is part of Odin's wargear, just as Thanos has his pointy shoulder-pads and shields, (which were probably the only reason Thanos didn't end up as a pile of purple ashes) by the way.
If anything, the use of Gungnir probably hastened Thanos' trip to his knees and that's all.

Anyway, you are probably right. Since placing Odin in the force-block didn't work, it wouldn't have saved Thanos as a "defense" either. He would have realized that, since he is Thanos, and channeled all of his power into his attacks.
But, that didn't help either.

That argument is stupid. There are about 100 movies where a good guy is beating down a bad guy and gives them chances to give in, back down. It's one of the biggest entertainment good guy cliches. Hell even in real situations where cops have a suspect pinned down or surrounded they still give them a chance to drop their gun.

They showed him getting up in multiple panels (to show how slowly he rose I guess) and the artist drew wobble lines around his shoulders to show he was clearly shaken. His defiant No was clearly to try and show Zeus he could take him (posturing). Trying not to show the weakness the artist obviously chose to convey.
