To be fair, Logan never got KO'd before Stryker put an adamantium bullet in his skull and left a big hole in it.(Stupid, but it's continuity)
Because he took tons of punishment in Origins, and even Zero's bullet to the head without any problems.

And he got shot in the head in X2
But continuity wise, Origins happened first. So it's because of the big 50 cal sized hole in his skull from getting shot with an adamantium bullet that he gets knocked out.
Why would a single hit from Sabretooth ko him in X1, when he could fight him all day in Origins?
Why would a scared trigger happy cop with a Glock be able to ko him with a headshot when Agent Zero, a guy with perfect aim and better weapons only piss him off with a direct shot to the head in Origins?
Because Stryker put a hole in his skull and it affected him.

1. Because Sabertooth in X1 was bigger and stronger than the Sabertooth in origins.
2. Because Zero's bullet glanced off the side of his head whereas the cop's bullet hit him straight on. Plus the cop shot him near point blank IIRC. Blaming him getting KO'd due to a bullet in the head is silly. He healed from that head wound. Granted it's not covered in adamantium but his brain and normal bone should have healed properly.
Logan wasn't missing any adamantium in his skull in X1, we see an x-ray of his skeleton.
The cop's bullet didn't penetrate his skull, it broke the skin and crushed against the adamantium. It was a blunt force KO to the skull, not his brain being damaged like in Origins.
Origins' continuity flows very poorly with X1-3. But if you want, you can pretend his adamantium healed, as per the comics, ie Beta Adamantium.
