Wolverine or stalemate (if Dracula goes mist form and stays there). Dracula's strength isn't something Wolverine hasn't faced before and nothing else in Dracula's arsenal would do jack to Logan.
If Dracula is stupid enough to attempt to turn Wolverine, he'd be playing with fire. In at least one alternate reality, it was shown that Wolverine had the will to resist Dracula and challenged him to a fight for the title of Lord of Vampires. Guess who won?

Dracula embarrased logan twice IIRC. First in UXM 159 and UXM annual 6 where he took control on him with just a bite.
