Luffy could take out Spiderman by flexing his Haki. Physically Spiderman is a joke by OP standards, Luffy took out 50,000 Fishmen with a single flexing of Royal Haki.
Luffy has Spiderman beat in strength, speed, durability (Even going beyond the whole rubber thing), range, he has him beat in almost every regard.

Current Luffy is far stronger, faster and has techniques to amp himself further. Would post more but thats all thats needed to be above Spider-Man.

Why wouldn't Luffy just dodge? He has both precog and superhuman speed.
Remember in my early examples was 'a foe who moves too fast to be seen and slices through stone'. Luffy fights with super fast foes a lot. He is superhumanly fast. Spider-man simply doesn't have that kind of speed advantage, if any.
