Eh well the Togruta species can stand between 1.5-1.9 meters tall, so not big a shock she's 6'1. Although this is probably including the horns, so without those involved, she is probably shorter yes.

Pretty sure her montrals don't factor in when measuring her height.

Well according to Shaak Ti's height, that appears to be the case as she stands at 1.78 meters without including the montrals. I don't see why you wouldn't stop at the head, otherwise, Jaxxon is one huge ass Lepi standing at 8 feet tall.

Was able to watch...was ok, but I really am having a hard time with suspension of disbelief...especially near the ending..was actually surprised though that the Brother Inquisitor appeared first and not the Sister.

But really, I had some issues with it...but maybe those would be lessened here...was it said that the vehicles used by the Empire were prototypes? I recall that the TIE fighter was a proto? The AT-AT also look like early designs given the head structure.

Considering there are rumors that Snoke's design looks vaguely snake-ish, I wonder if this was concept art for him. It certainly gives that rumor more credibility.
