You're going to need to clarify what you mean by peak.

For Amazo: Does he start at his true peak (i.e. w/ powers of the Warlogog)?

For Celestial Team:
Does peak Galactus have UN?
Does Thanos have HOTU/IG, or are we using a regular artifact-less Thanos?

If Amazo starts at his real peak, and the teams get no god-like equip, then he rolls though everyone. If team gets UN/IG and the like, they better erase him from existence before he copies them and uses their powers against them.

Of course he can, that's one of the reason he can trash Superman.

Amazo copied the Warlogog, and artifacts beyond limits, if he can copy that, strength is nothing he can't copy.

Amazo has copied human genes, various alien genes, divine weaponry (WW's Lasso), GL rings, the Warlogog (which grants virtual omnipotence), the Speed Force, and the powers of nearly every hero on Earth.

After all that, you don't think he could copy the goddamn Hulk?

Nope what is there for him to copy is he going to copy hulks unlimited gama source nope ? Hulk isnt a mutation... He isnt evolution.... Mutations are born.... hulk wasnt born that way...

You really do have no clue what you're talking about.

First off, yes, Amazo could copy an infinite gamma source. He copied something that grants omnipotence, so why the phuck not?

And second, of course the Hulk is a mutation. Whether he was born with it or not, he was mutated by exposure to gamma radiation..same as the Fantastic Four. He isn't a "mutant" by Marvel's comic definition (i.e. those born with the mutant x gene), but his powers are derived from a mutation.

Third, Amazo doesn't need to copy the Hulk anyways. He'd just beat the shit out of him.
