Yeah, those were entertaining, especially Vizsla vs. Maul (ignoring the inconsistent qualities), and of course my all time favorite: Sidious vs the Brothers. I think I enjoyed all of Ventress' fights. Oh, and Krell vs the 501st. Krell was a beast.
As for Cad Bane, I wish we seen more of him. He turned out being one of my favorite villains in the series.
There really wasn't an inconsistency with Maul. My theory is that he refrained from using the Force to smite Vizsla for a very sound reason: he wanted to prove to the honor-obsessed Death Watch troops that he could win the fight without active use of the Force.
My list is turning out to be pretty much all TCW inclusive.
Yoda v. Dooku in Dark Rendezvous is one of my favorites as well, because the emotion in the fight is arguably more important than the actual combat taking place. In this way, it's a lot like the OT; emphasis on emotion, atmosphere, and comes off as a battle of wills rather than wushu-influenced saber waving.
OT Fights, despite looking slow and sad in comparison with other media, still get some mileage for me, especially since the films themselves are better than the PT. Also, Han shot first.
This thread makes me think back to an analysis I had of the TPM end-fight, long long ago, where I really dissected it. I ended up concluding that Maul was epically toying with the Jedi and they were pretty much nowhere near his skill level, but they kept landing hits because he was holding back. This is probably because Ray Park can break both opposing actors in half if he really went all out. Or Nick Gillard is a crap stuntsman.
