In terms of using their weapons in a fight; absolutely.

If only a weaker character was shown effortlessly knocking around large animals around, a feats above throwing a few guys around..

Gorons are as tough as rocks. I say roll them up put em in Catapults and FIRE!

And they can roll through armies devastating them.

No, they are not. Fleshy parts are very vulnerable.

That's why you Roll them up. In their ball like state they are stone.

They have fleshy parts and can be stopped in their tracks.

Link slashes their fleshy parts and at best they're irritated but not harmed.

THey have fleshy parts on their underside. I'm not saying their invincible. But arrows would be very ineffective on a rolling Goron army. They would devastate a Lotr infantry and cavalry army. And then you just need Link taking down the Fell Beasts, Ring Wraiths. Link can slay the Balrog, (face it he defeats giant bosses all the time and its literally made of shadow, Master Sword = Bane of all Evil).
