I think showing the Jedi Hunt would help to link the trilogies together better and would explain why Yoda and Obi-Wan are the only Jedi left. It would also help to show the complete transformation of Anakin.
Although I dont mind reading the EU stuff I'd rather they showed the Jedi Hunt on screen.
