Fistos best dueling feats are a practice match and beating droids. There is no real evidence he can take Draay, and conversely I'm not seeing Draay being able to take Fisto. Draay's force feats are better than Fisto's, whereas his dueling ability may or may not be as "good" as Fist's track record of beating a weakened Grievous, getting beaten by a pre-prime Ventress, and beating droids.
