I could see him do most of the things that Superman did, if he has items of power.

I think it would go more or less this way.
Thor would be also trained by someone like Mogul Jr.
He would go prepared against the first Probe, like he did against Thanos clone.
Once he sees how powerful it is, he would go for some artifacts from Asgard, belt of strength etc., maybe even the Destroyer Armor or Jarnbjorn, with it and the Loeb Force, because Loeb would write the story, he would do as well as OWAW Superman. Though I could imagine a heroic death at the big bang.
