Inspired by concept art, can Dooku defeat an ambush from Quilan Vos and Asajj Ventress?

Yes.

I'm going with Dooku as of now.

Same the count should take this, Quinlan gets casually disposed of and he can either outduel or oneshot Ventress with TK.

Considering the casual ease with which the Count annihilated Master Tiplee, one of the duo meets a similar fate and then they other gets pwned.

Darth Tyranus shouldn't have too much trouble. His feat against Ventress and Savage suggests to me that he can take it.
