Jax see's Sam killing one of his girls and chases him into a warehouse.

Sam has 2 small knives and a pistol & Jax has a pistol & his Kabar.

Sam: Supernatural

Tbf Demon's don't seem to use guns and Jax is pretty bad ass.

Gunfight? I might go with Jax. Dude has fought in warzone-like situations. Knife fight will be tough but I would lean towards Sam.

No but the hunters that regularly take down demons, werewolves and vampires do. Sam's been able to take down any of them.

To add, the environment favours Sam, who often used stealthy tactics. Being a great strategist gives him that edge here, with close combat being a clear win.
