If he wanted to get back at Thanos, he could have waited 5 more seconds to shove a grenade in his mouth, so that he didn't end up getting erased like a ****ing idiot. Him "losing his shit" caused the good guys to lose.

Actually, everything went according to plan... Star-Lord was apparently supposed to act in this way, otherwise Strange would've interfered.
This was their only chance, it was stated in the movie. Twice.
Interesting little tidbit on the Hulk which might redeem him a bit in people's eyes.
It wasn't just simply him being scared (though there seems to be an element of that). He's also tired of doing all the legwork.
