Qui-Gon Jinn's.

Darth Maul's Saberstaff.

Jinn's got a pretty sweet-ass hilt.

The Inquisitor's circle grip thing is pretty cool.

For purely aesthetic reasons my favourite lightsabres are those wielded by;

* Ven Zallow

* Ki-Adi-Mundi

* Plo Koon

* Kit Fisto

Hetts lightsaber is pretty badass

Kyle Katarn's saber is pretty good imo, a long hilt good for a two handed power blows. Perfect for Djem So and Juyo imo

Hett's original lightsaber and Darth Nihl's are my personal favorites.

Sidious's and Revan's.

The coolest looking ones I can think of are Krayt's, Talon's, Ahsoka's, Sidious', and Kota's.
