Which is a metaphor for how they have a substantial lacking in human traits such as compassion, i.e, they now function more as droids in a mental way. Of course they are part droid, but they are also part living being - which is a cyborg. A droid, full-stop, is not living in any sense of the word. R2-D2 is a droid, no part of him is living matter. General Grievous has a brain, organs, eyes - he's a living being, just one with a heavy amount of cybernetic augmentation. Same with Vader.
