This one's easy. Though I consider Viktor faster than Loki and strong enough to hurt him somewhat, I just don't see how Viktor can get past Loki's durability. We have yet to see any Asgardian (Loki included) get injured by human-made weapons. Unless Viktor's sword is made out of some super metal we don't know of, I don't think it can injure Loki.

Loki fairly easily. Loki requires either Hulk class strength or Asgardian level weaponry to genuinely hurt him. Viktor has neither of these.

Would Viktor's bite affect Loki, if he could manage to do it?

He'd probably break his teeth trying to bite Loki.
