I'd give them both a fighting chance. If Mace can lock her into the same stalemate her got Sidious into he'll likely win eventually, but Zannah has a great chance to disengage and mind-blast him.

In it's raw defensive ability, yes. It lacks flexibility, agility and the ability to counter attack easily like Kenobi has, so if you think that makes his better then I guess thats fair. But Zannah defense is undoubtedly stronger imo.
Zannah's Soresu hasn't proven to be nearly as good as Kenobi's. She wasn't truly holding off Bane, he actually had the upper hand against her until she spawned her tendrils, if I recall correctly. Other than that, which isn't very impressive considering she didn't hold her own with her Soresu alone, what other good feat does she have against a competent opponent?
Zannah has a lot of raw power and great sorcery skills, but she hasn't really proven to be a great duelist.

She did hold off Bane. She was capable of keeping up with him in speed and even his full strength power attacks only staggered her for a split-second before she recovered and she handled him somewhat effectively in normal Soresu with only some issues with his size and strength in very close quarters. But after she started up her defensive wall she repelled all his attacks without any issues, causing him to switch tactics rather than continue to press her defense.
Tellingly enough, even after she'd fallen to the ground and Bane was fully unleashing on her after breaking her ribs, she still manages to block every attack from a massively disadvantaged position and successfully regain her feet and put significant distance between them.
If Kenobi was on the ground with broken ribs and Maul was standing over him going apeshit on him, how do you think he'd perform?
Yeah, cuz he'd broken her ribs and resisted her mental attack.
After he fails to get through her defense, he starts using an unpredictable style that causes her give ground defensively, apparently herding her towards the shuttle to box her in. Meanwhile Zannah is building up a massive mental attack and is seconds from unleashing it on him when she actually stumbles on fresh graves (in the dark iirc) she'd overlooked that he'd actually been sheparding her towards. She falls, he wails on her until she escapes and she recognises her disadvantage. She tries the mind spell, he breaks out so she tries the tentacles.
Meh, to me it seems like Zannah is only barely able to escape Bane's attacks, blocking them in any way she possibly can before being overwhelmed.
Whatever the case may be, we've not seen Kenobi's reaction in a similar position to Zannah vs. Bane (like Maul going apeshit and attacking him unpredictably), but we can't undermine him or assume he wouldn't deliver, especially because he's considered the best Soresu user in the entire PT Order and we've seen him go against an enraged Vader who wants nothing more than killing him and is going all-out. A Vader skilled enough to crush Dooku and considered to be the most skilled (former) Jedi Knight of the PT. The physicality of his blows and attacks is huge, and due to his uncontrolled rage his Djem So becomes somewhat unpredictable during their duel. He still manages to hold him at bay in a long, long duel in which Kenobi ends up as the victorious combatant.
I honestly think that alone is more impressive than any Soresu feat Zannah has to her name.

Vapaad always boosts Mace though sure, I agree that the amp wouldn't be as substantial as it would be with most dark siders.
