In general, the games not as bad once you learn how to cheese the AI. Essentially, a lot of Irish Whips, abuse outside like a dirty rulebreaker, and keep lifting them up and spamming the "dizzy" grapple moves where you don't actually lock up before hand. (The AI seems to have more trouble reversing those, compared to standard grapples.)
Body part targets also work pretty well, but do next to no damage.
Yeah, you have to be really dedicated when it comes to submissions that target the legs or arms. Otherwise it can take forever.

Hitman 2's "Legacy" mode. Basically anyone who owned the first game in full, got all of the levels from the first game updated to use the mechanics from the sequel, and they even redesigned some of the levels too to add some bits and pieces.
And they even gave the first level of Hitman 2 away for free too.
